I’m all about healthy, quick and easy meals when I’m cooking during the week and this recipe ticks all of those boxes. Spicy and garlicky are my 2 favourite combos! Serve with rice or steamed veggies and you’ve got yourself a nice wholesome meal!
Serves 2
What you’ll need:
2 tbsp olive oil
1.5 onions, sliced
2 cloves garlic, chopped
400g can of chopped tomatoes
50g black olives, pitted
1 tbsp of fresh parsley, chopped (frozen or 1/2 tsp dried can be used)
50ml dry white wine
1 tsp brown sugar
1 tsp red chilli flakes
salt and pepper, to taste
250g cod fillets
Let’s kook:
1) Heat the oil in a frying pan, add the onions and garlic and sauté for 3 mins until soft.
2) Add the tomatoes, olives, parsley and wine. Stir everything together.
4) Add the sugar, red pepper flakes and season with salt and pepper to taste.
5) Place the cod fillets in the sauce.
6) Pop the lid on and simmer for about 5 more mins or until the fish turns white.
7) Serve each cod with rice and enjoy!
